From hunting and fishing for food to backyard slaughter, meat is an ever controversial topic. Whether you believe responsible meat eating can help the climate, is a greenhouse gas nightmare, or simply that all killing is wrong—it seems obvious to me that a more honest approach to meat involves understanding and acknowledging where it comes from.

But that's not going to stop the controversy.

Sure enough, my original post on Trace Ramsey of Cricket Bread's photo essay of a hog butchery workshop in New York caused a stir too. But the discussion was so valuable, we thought we'd present some more of his pictures on this challenging event. So what does it look like when you get better acquainted with your meat?
