Chef Bayless is well-known as the driving force behind restaurants Frontera Grill, Topolobampo, and XOCO. He has been instrumental in bringing authentic Mexican cuisine to the world through his food, cookbooks and recipes, and television appearances.
Chef Bayless is somewhat less well known for his passionate support for organic farming and farm-to-table sustainability, both served by his non-profit, the Frontera Farmer Foundation.
Committed to promoting small, sustainable farms serving the Chicago area, the foundation provides capital grants to insure that small local farms stay connected with the area's eaters. Frontera Grill and Topolobampo were also awarded 3 Star certification by the Green Restaurant Association.
