Clotilde Dusoulier adapted the recipe for these hazelnut and pepper cookies from Laurence Salomon's cookbook Fondre de Plaisir, making a few, rather unique changes.

She used butter and spelt instead of oats and margarine, and brought out the flavors of the nuts with two even more inspired swaps: she replaced the cinnamon with pepper and the water with rosewater.

The result, she writes, is one of the best shortbreads she's ever had -- which means copying her experiment in your own kitchen will be well worth it.
