Manuela Calonaci is the head chef of Organic Tuscany, a sustainable cooking school in the heart of Italy. As a student there, not only will you get to enjoy her melt-in-your-mouth pappa al pomodoro, crostata di frutta, and torta della nonnas (custard pie with pine nuts), you'll learn how to prepare them for yourself.
Students visit local farms and learn how to make your own pasta, all while sipping on organic Tuscan wines. Chef Calonaci teaches both the importance of sourcing high-quality, organic ingredients and how to include them in divine Italian dishes.
