"When life gives you lemons, make gluten-free lemon merengue pie," Karen Morgan, the official gluten-free spokesperson for Whole Foods, has been known to quip. Founder of the virtual online bakeshop, Blackbird Bakery, Morgan has been spreading the gluten-free gospel for more than a decade, and it's gaining steam at a quick pace.

Author of the best-selling cookbook Blackbird Bakery Gluten-Free: 75 Recipes for Irresistible Gluten-Free Desserts and Pastries (Chronicle, 2010), Morgan's mission is to create mouth-watering desserts and pastries as equally irresistible to gluten-free and gluten-full eaters alike. She has a special knack for adapting traditional gluten-based recipes, like the Nun Cake pictured above--a turn of the century confection scented with rose water and caraway seeds.

And while she's at it, she's got a new project on the burner: the Blackbird Bakery Community Cookbook, a work-in-progress that aims to be the first ever gluten-free community cookbook.
