Restaurant of the Week: Squatters Pub, Salt Lake City, UT

In celebration of ski season, we thought you'd like to warm up this week at Salt Lake City’s original brew pub, Squatters. Home of the Salt Lake Brewing Company, the business was established in 1989 and in 2004 was awarded Environmental Company of the Year by the Recycling Coalition of Utah. Executive Chef Eric Bell uses the highest quality of organic and locally grown food for their eclectic menu of pub favorites like jambalaya, grilled stout salmon and the famous bourbon burger. All of their goods and services are purchased from locally owned, environmental and socially committed companies. Squatters certainly sets an example for others - they purchase products produced from post-consumer recycled materials (paper napkins; deli paper; paper bags; and hand blown beer bottle drinking glasses). They also reduce their power needs (high temperature dishwashers; waterless urinals; wind power; water-wise garden; improved water habits; energy-efficient lighting) and purchase renewable, non-polluting energy. Recently, Bell was elected vice president of the Utah Chapter of Slow Food®, an international organization whose aim is to protect the pleasures of the table from the homogenization of modern fast food and life. ::Squatters
