Who wants to turn on the oven when it's hot outside? These stove-top macaroons are quick to make, delicious to eat, and pretty healthy to boot!
For a luscious summer treat, try these no-bake macaroons. They are utterly addictive – far tastier than they should be for being so healthy! They are quick and easy to make, which is why my family makes them every time a sweet craving hits.
The original recipe comes from a Paleo Diet website called The Unrefined Kitchen. It doesn’t contain any grains or refined sugars, although my modified version sometimes includes chocolate and rolled oats, depending on what’s in the pantry. They are also gluten-free, vegetarian, and vegan (if you stay away from the butter).
Put honey, cocoa, and butter in a medium saucepan over medium-high heat. Bring to a boil, simmer 1 minute, then remove.
Stir in almond butter and vanilla. Stir in shredded coconut (and rolled oats, if desired).
Spoon onto a large, wax paper-lined baking sheet. Chill in fridge until firm, at least a half hour, then transfer to an airtight container. Store in fridge to keep firm.
Makes approximately 2 dozen macaroons.
