10 No-Cook Recipes for Cool Kitchens
1. The Gazpacho Family

If you're close to shunning summer non-cooking in the name of night-after-night of gazpacho reruns, I don't blame you. It's easy, refreshing, delicious, simple -- but a person can only bear so many bowls of basic gazpacho without starting to feel a little weary. Once it sets in, gazpacho tedium can have a firm grip. What to do? Welcome new members to the clan!
Check out these charming candidates up for adoption for your summer soup set:
- Watermelon joins the party in the watermelon soup phenomena, try Jerry's Watermelon and Tomato Gazpacho.
- Becky at Glue and Glitter mixes up the watermelon gazpacho trend with Watermelon Fennel Gazpacho. Fennel!
- Food & Wine reminds us that not all gazpacho is red and tomato-y, as in Spain's classic Green Grape and Almond Gazpacho which includes grapes, cucumbers, almonds, scallions, and watercress.
- And if those fail to shake you from the gazpacho rut, brace yourself: Spicy Cherry Gazpacho with Basil! You may now die and go to heaven.
(For non-vegans, you can kick any of these up with crumbled feta or soft goat cheese.)
