Green Eyes On: Three Cheap and Tasty Potato Recipes
Ingredients
4 or 5 potatoes--washed and grated
1 small onion--peeled and very finely diced
1 egg--whisked
1 tablespoon flour
1 ½ teaspoons salt
½ teaspoon pepper
2 tablespoons butter or canola oil
Directions
After you’ve grated your potatoes, press them in a towel and drain any excess moisture.
Mix the potatoes with the remaining ingredients except for the butter or oil. Add more flour if needed to form a batter-like consistency. In a frying pan, heat the butter or oil. Form small patties the size of your palm and lightly fry a few minutes on each side.
Egg & Potato Scramble

The eggs could be considered the splurge here but buying from a local egg farmer may reduce the price. Saving your old egg cartons and taking them with you to the farmer’s market as a gift to the egg farmer might help your cause.

4 eggs
2 tablespoons milk
2 small potatoes--washed and finely chopped
1 tablespoon grated cheese
salt & pepper
fresh chives to taste
spinach optional
Directions
In a small bowl, whisk together the eggs and the milk. Prepare a frying pan with a small amount of butter. Add in the potatoes and sauté until cooked through. Add in the whisked eggs and stir until they’ve cooked to a scramble around the eggs. Stir in the grated cheese and season with salt and pepper and any fresh herbs you have on hand (chives are especially nice). If available, toss in some fresh spinach at the last minute or serve the scramble over a bed of baby spinach leaves.
