Grassland Beef: The Best Beef

Grassland beef just changed its name to US Wellness Meats. I guess that’s what happens when good products meet bad marketing. It doesn’t taste like medicine, as the name now seems to imply, it tastes just the way that beef is supposed to. It’s sort of gamy, deeply flavorful, quite honestly…it tastes…well…meaty. In a primal way. And you realize that you never reallyknew the meaning of that word before.

Be warned, though, it cooks a bit more quickly than conventional beef, soyou’ve got to watch it carefully. Take your steaks off the grill a minuteor two before you think you should, and then let them rest for a few.

New York Times food writer Marian Burros says: "It has taken me three years to find a piece of grass-fed beef that is tender, juicy, meaty and available online... the steaks from Grassland Beef are satisfyingly delicious." [11-26-2003]
