Year after year of the same turkey, stuffing and cranberry sauce can be tiresome. This Thanksgiving why not try out something new using only local ingredients found within a 100-mile radius of your home. Bahar Zakar, winner of the 2006 100-Mile Challenge created this stunning three-courser:
Salad: Radish, sprout and bell pepper
Main Course: Tofu cutlets braised with wine and herbs with sides of butternut squash bisque, roasted Brussels sprouts and leeks, mashed heirloom potatoes with caramelized onions and corn muffins served with apple and hot pepper relish
Dessert: Apple compote and pumpkin puree mousse
