Chocolate itself, as an ingredient, is vegan because it comes from a plant, but it's frequently processed with dairy products like milk and cream, which come from animals.

The milk...although this is generally not a problem in dark chocolate. In the case of truffles, the fillings are traditionally made with cream and butter, so a vegan truffle is a treat indeed.
