Blueberry Breakfast Bruschetta

Bruschetta is one of my favorite appetizers. In fact, it is the litmus test for any new Italian restaurant I try. It might seem simple enough to make, but you really need to understand your produce to make a great bruschetta. That said, sometimes I cannot wait til dinner to get my fix. Enjoy this appetizer over brunch, with good friends and plenty of mimosas.
1 small carton of organic blueberries
1 cup of honey
1 container of whipped cream cheese
French bread, cut into 1/2-inch slices
1. Wash the blueberries and place them in a large mixing bowl.
2. Using a small sauce pan, bring the honey to a boil. Pour it over the blueberries and let stand for 5 minutes. If you haven't had these before, you will love them. Honey-poached blueberries just melt in your mouth.
3. Spread a thin layer of whipped cream cheese over every bread slice. I grilled my bread first, but that is purely optional. It was a warm day, so why not?
4. Drizzle some of the blueberry-honey mixture over each piece of bread.
